This recipe has been floating around in my head for a few months. I am so glad that I finally got around to making it! (It was definitely worth the wait!)
Serves: 4 to 6
1.5 lb ground meat of choice (preferred: turkey or beef)
1 egg
1 packet taco seasoning
1 can tomato soup
1 packet of crackers (1/4 box), crushed
1 can diced tomatoes with green chiles
1.5 c frozen corn (or 1 can corn, drained and rinsed)
Taco sauce, picante sauce, or salsa in your desired level of heat
Grated cheese of choice
- Preheat oven to 350.
- Mix first seven ingredients in a bowl, combining well. Hands work great for combining these ingredients. (Don't forget proper hand-washing techniques!)
- Put the meat mix in a loaf pan.
- Top with taco sauce / picante / salsa.
- Bake for 60 minutes. If more time is needed, bake for 20-30 more. (Some ovens are weird; my oven worked great at 60, but it may take a bit longer in others.)
- Serve. Sprinkle with cheese.
Alternatives: add in 1/4 onion, diced, and/or a green/orange/red pepper, diced. (I don't like them, so I didn't use them.) My original intention was to use taco shells / tortilla chips instead of crackers, but I don't know the proper ratio / amount. Would be great to use them under this, though.
