From La Cocina de Becca:
1 lb ground turkey
taco seasoning (I used Old El Paso's low sodium kind)
1 14~ish oz can petite diced tomatoes (mine were no salt added)
1 14~ish oz can black beans (mine were no salt added)
1 14~ish oz can corn
Cook turkey. You can either crumble it by hand as you put it in the skillet or break it up with the spatula as it's cooking. The former might prove a bit easier, if you don't mind getting your hands dirty. While turkey is cooking, add in taco seasoning to taste. I didn't add much in, but you can add more in after it's cooked (so it's safer to sample). Just remember that you cannot take out the seasoning once it's in there should you happen to get too much.
While turkey is cooking (or after it's done, whatever) pour tomatoes into strainer and rinse under cold water. Put the tomatoes into the bowl you're going to serve the Dip Thing in. Rinse the beans and corn in the same way, and then add to the bowl as well. Stir to combine. Add in ground turkey.
Options: I heated mine altogether in the microwave for 4 minutes, but I had mine split into two servings. If you want it warm, maybe heat (entire thing) for 6 minutes. Stir afterwards.
I also added in cheese (about 2oz) while it was hot (post-microwave), then about a heaping cup of mild salsa, and 3 Tbsp sour cream.
Hope it turns out yummy!
(I made this to take for work one day. It was amazing. You can put in tortillas and eat for burritos. You can dip it with tortilla chips or Doritos. You can put it in taco shells. Or you can eat it plain with a fork. It's just good, alright??!?)
